It's all about dodorita today. Yeah yeah.. Do-do-ri-ta! But first of all let me give you a little bit of insight on why I have been 'scarce' on here..
Wow! Have i been busy or have i been busy! Lol..It's been a crazy few months. From the restaurant chef duties and management to my food group management, kscuisine , accounts management, family (like having had to change childminder thrice in the last 3 months) and more! It's been hectic and that is putting it mildly..hence why the blog has had to be quiet for some weeks with no updates. You know what? I am not beating myself up for it. In the words of a friend Folakemi of notjustamum.com by the way you really should check out her blog " I am ditching guilt and not beating myself up when I'm not able to juggle it all as I would love to. I prioritise and like I always say nothing comes above my family and I know even when i am not updating my blog as I should, you fans wait patiently for when I'm able to do and whatever I post, whenever i do, still makes a difference to a lot of people and that is one of the reasons I love what I do. So we will continue to take it one step at a time my lovelies.
Now let's go back to dodorita or should I call it plantainrita? I think I prefer dodorita so yeah let's call it dodorita.
We have yamarita (recipe coming soon), the potato version and I present to you the plantain version which I call dodorita. It is easy (you all know I love easy), quick and taste amazing. So why not if not? Dodorita is simply plantain dipped in egg and flour and fried or for the fitfam baked. Let's get cooking!
Preparation time: 3 minutes
Cooking time: 5 minutes
Total time: 8 minutes
Meal type: Snack, main course, appetiser
INGREDIENTS (Serves 2)
1-2 Plantain
1 Egg
½ cup Flour
1 teaspoon Ground pepper (optional)
Pinch of ground ginger (optional)
1 Stock cube
DIRECTIONS
1) Peel the plantain and cut into shape.
2) Break the egg in a bowl, add the grounded pepper, ginger and stock cube and whisk
3) Rub the plantain in flour
4) Then dip in the egg mixture
5) Repeat process till all is done
6) In a frying pan, add Sunflower oil and heat
7) Fry plantain till golden brown. Turn around to brown the other side
8) Turn to brown the other side
9)Put on kitchen towel to drain excess oil
10) Dodorita is ready and it's best served warm
Enjoy as appetiser , main meal
Outer side was crisp and moist and yum inside. This is a winner with kid.
Extra notes
For a healthier version bake instead of frying
Substitute wheat flour for flour for a healthier version
