Homecooks who wants to up their cooking game, teenagers, professionals who wants to learn new techniques, people who wants to start and run their own food business. This course is for you! I will be sharing great cooking tips and showing you how to cook great food. This classes will be full of knowledge sharing and advice. I will not be holding back. Classes will make use of live videos , live chats, pre recorded videos etc

Vegetable Beef Stew

Hello Kfam, As requested by you on my instagram page, here is the recipe for Vegetable Beef Stew. This recipe like all my recipes is easy to make, with easy to find ingredients, fuss free, healthy and delicious. So here we go guys, let’s cook:

Vegetable Beef stew

INGREDIENTS

750g Beef 

1 red pepper (diced)

1 yellow pepper (diced)

1 green bell pepper (diced)

3 medium Carrot (sliced)

1 Brown Onion (diced)

2 Cloves Garlic (chopped)

1 Scotch bonnet (chopped)

1-2 teaspoon K’s Cuisine Cameroon pepper

1 tablespoon K’s Cuisine Multipurpose Seasoning

1 teaspoon thyme

3 Maggi Cubes (stock cubes)

Few leaves fresh Coriander or 1 teaspoon ground Coriander

Ginger

1 Cooking Spoon Sunflower Oil

2-3 cups Beef Stock or Cooking Wine

2 tablespoon Cornflour

Cabbage and any other vegetables of choice (Optional)

 

DIRECTIONS

1) Cut the beef into small cubed bite size pieces. Rinse, drain and season with 2 stock Cubes, salt, Multipurpose Seasoning, thyme, garlic and ginger.  Leave in the fridge to Marinate for atleast 30 minutes

You can do this in a bowl, ziplock bag or freezer bag. Make sure the beef is well seasoned

2) While leaving the beef to marinate, prepare the peppers, Onion, Carrots and other vegetables ready

3) Add Sunflower Oil in a pan, add the beef and brown the sides. This takes about 3-4minutes

4) Add in onion, garlic, scotch bonnet, cameroon pepper, half of the diced peppers, Carrot.

The other half will be added towards the end for some crunch. If you don’t like crunchy, add all in at this stage

5) Add the beef broth or Wine. Cover and leave to cook on low heat for 15 – 20minutes

I used beef broth on this occassion

6) Add in the other half of the peppers, coriander, taste for seasoning and adjust accordingly and leave to cook for another 5 minutes.

7) Mix Cornflour with water,  add the mixture into the stew to thicken and get creamy, healthy delicious vegetable beef stew.

8) Take off heat and enjoy with rice, pasta, yam, plantain, on it’s own or with any meal of choice

Grilled Fish

Hello Kfam, here is the recipe for Zahmilah grilled fish. For this recipe, w used the Zahmilah sauce and K’s Cuisine Multipurpose Seasoning. If you are wondering what Zahmilah sauce is and where to get Zahmilah sauce from, it’s a sauce you can make yourself. The recipe is in the Zahmilah ebook which can be downloaded HERE . If you don’t want to make Zamilah sauce check the blog for another of my grilled fish Recipe HERE. So guys, let’s cook:

Zahmilah grilled fish

INGREDIENTS

Whole Fish (Used Croaker fish but you can use any fish of choice )

Zahmilah sauce

K’s Cuisine Multipurpose Seasoning

Stock Cubes

Salt

DIRECTIONS

1) Descale, gut, clean the Fish, make slashes on it and marinate in and out with Zahmilah Sauce and K’s Cuisine Multipurpose Seasoning

2) Cover with foil and grill in the oven at 150C for 1 hour or till fish done

3) Bring out, take off the foil and return into the oven for another 5-10 minutes to brown the top.

4) Bring out from the grill, top or glaze with hot pepper sauce and that’s Zahmilah grilled fish ready.

Enjoy with any side of choice. Below we served it with fried yam, plantain and hot pepper sauce.

Minced Meat Sauce

Hello K’s Cuisine Family, As promised on Instagram that I will post this recipe before the new year I just have to quickly do it today as the new year 2017 is only but few hours away! Whoop whoop! I’m so excited about the new year. Can’t wait!

Let me quickly blog this minced meat recipe before I get carried away with some other things. So let’s go:

Minced meat Sauce

INGREDIENTS

500g minced beef

1 brown onion (chopped)

1 garlic clove (chopped)

Blended Pepper (mix of 400g plum tomatoes, 1 bell pepper , 1 Scotch bonnet and 1 onion)

1/2 teaspoon K’s Cuisine Multipurpose Seasoning

1 Cooking spoon Sunflower Oil

2 Stock Cubes

Salt

Chopped Mixed Vegetables ( Carrot, peas, sweetcorn)

DIRECTIONS

1) Heat Oil in a pot, sautée the chopped onion and garlic and add the minced meat. Leave meat to brown

2) When the meat is browned, add K’s Cuisine Multipurpose Seasoning. Add the Blended pepper, beef broth or water, stock cube and bring the sauce to cook for 15-20 minutes on low heat.

3) After the 15-20 minutes when the sauce is beginning to thicken, check for seasoning adjust accordingly and add the mixed vegetables. Simmer for 5 minutes and take off heat. Minced meat Sauce is ready.

Zahmilah Shrimp Kebab

Hello guys, So I was going to post this last night but i had a party I attended and didn’t leave there until midnight! I had fun at the party so all good. Before I get carried away with other stuff I just said I must post this recipe first .

This recipe makes use of the Zahmilah sauce which you can find recipe for in the Zahmilah ebook (HERE) but if you don’t have the Zahmilah sauce and you just want shrimp kebab you can use K’s Cuisine Multipurpose Seasoning or any other seasoning but taste will be different from using Zahmilah sauce. Here we go:

Shrimp

INGREDIENTS

250g Shrimp

2 tablespoon Zahmilah Sauce

Salt

Sunflower Oil

DIRECTIONS

1) Season the shrimps with Zahmilah Sauce, Stock cube and Salt.

2) Thread on Skewers and leave in the fridge to Marinate

I fried this time as I wanted it to be done quick

Carribean Curry Chicken

Hello Kfam, how are you all doing? As promised on my Instagram page here is the recipe for Carribean Curry Chicken. Carribean Curries are my favourite type of Curry not only because of the simplicity in cooking but also the amazing flavour and spices. Like you get the most with the littlest. You can pair this curry with rice, rice and peas, plantain, potatoes, etc. It’s Versatile and just amazing. Let’s Cook guys:

INGREDIENTS

4 tablespoons Carribean curry powder

750g Chicken (Breast, thigh, drumstick or any part as desired)

1 Onion

1 Scotch bonnet (chopped)

1 tablespoon Thyme

1 stock Cube

1 teaspoon K’s Cuisine Cameroon  pepper

1 teaspoon K’s Cuisine Multipurpose Seasoning

Salt

2 cloves Garlic (Chopped)

1 Peeled Potatoes (cut)

Carrot (cut)-  (Optional)

1 Cooking spoon Vegetable or Sunflower Oil

*I  normally just use any brand of Carribean Curry powder but there is this brand I got and I am so loving it so thought to share it with you. Find the picture below.

DIRECTIONS

1) Wash the Chicken and season with 2 tablespoon Curry powder, scotch bonnet, spring onions, garlic, stock cube, thyme, multipurpose seasoning, salt Cameroon pepper. Cover with cling film and leave in the fridge for 2-6 hours or over nite.

2) In a pot, heat oil on medium heat then add in the remaining 2 tablespoons of Carribean curry powder. Stir the curry powder in oil until it starts to change colour (about a minute or two)

Be Careful not to burn the curry.

4) Add in the marinated Chicken and brown the sides. Be careful not to burn the chicken

5) Add 2 cups of water, stir and cover the pot with lid. Leave to cook on low heat for 30 minutes. If Chicken not tender after this time, add some more water, adjust the seasoning and leave to cook for more time.

8) When Chicken is tender and pulling off bone, add potatoes in to thicken. If using Carrots add in at this time

9) Simmer for 10 minutes and take off heat

Zahmilah Sauce Scrambled Eggs

Hi Guys, I made Scrambled egg with Zahmilah sauce the other night. We had it with Agege bread and it was amazing. The Zahmilah sauce gave the egg the right kick. So here I am to share the recipe. It’s a quick one. Let’s go:

INGREDIENTS

6 eggs

1 brown Onion (Chopped)

Tomato (Chopped)

1 tablespoon Zahmilah sauce

1 teaspoon K’s Cuisine Multipurpose Seasoning

1 stock cube

Salt

Sunflower Oil

DIRECTIONS

1) Break the eggs in a bowl, add K’s Cuisine Multipurpose Seasoning and salt. Whisk together.

2) Heat Sunflower Oil in frying pan then add the chopped onions and tomatoes and stock cube. Sautée for 2-3 minutes

3) Add Zahmilah Sauce followed by the eggs

Ogi Smoothie

Hello everyone. It’s another smoothie recipe today but this time with a twist. Adding our own Nigerian Ogi (pap) to smoothie. Yes it’s Ogi smoothie. If you are the type that doesn’t like Ogi this is one way you can try it. The combination of Ogi and fruits works well together  to give a nutritious, delicious and filling smoothie. So here we go:

INGREDIENTS

Ogi (Pap)

Orange

Cucumber

Strawberries

Honey

You can use any fruit of your choice in whatever quantity you prefer

DIRECTIONS

 

1) Make the pap and leave to cool

2) In a blender add Ogi as Base

Zahmilah Grilled Beef

Hello guys,

As promised, I will be sharing recipes of food to cook with the sauce. So today’s Recipe is Zahmilah grilled beef. Let’s cook:

Zahmilah grilled beef

INGREDIENTS

2kg Beef

4-6oz Zahmilah sauce (click here to purchase the Zahmilah sauce book)

2 Stock Cubes

Salt

2 tablespoon Sunflower Oil

DIRECTIONS

1) Cut beef into  medium thin fillet , chunks or steak

2) Pat dry, add stock Cubes, salt and Zahmilah sauce. Mix well, cover the beef and leave in the fridge to Marinate for 60minutes

3) Heat tablespoon of Sunflower oil  in a pan and sear both sides of the beef. Transfer back into the oven dish or tray.

4 )Add 3 tablespoons of Zahmilah sauce, rub in the meat and grill in the oven on 150 degrees for 30 minutes or till done. Turn and brown the other side.

Remember to coat the beef at intervals with the juice from the tray.

5) That’s Zahmilah grilled beef done. It was superb. Packed full of flavour, tender, juicy and moist. Easy cooking bold flavour!

I Served it with buttered rice and hot pepper sauce.

6) I served our guests this and they asked for more. Hubby friend’s wife asked me how I seasoned the meat and ofcourse I referred her to the Zahmilah book😊

Oven Baked Moin Moin

Hello guys, today’s Recipe is for oven baked moin moin. This recipe is for when you do not want to steam moin moin on stove top. This recipe is very straightforward. First, click HERE for moin moin batter recipe. Once you’ve done that then Let’s cook:

INGREDIENTS

Moinmoin batter (Recipe here)

Fillings (eggs, Prawns, fish, corned beef)

DIRECTIONS

1) To get the moinmoin leaf flavour use the leaves to line your dishes like I did in the picture below. If not go to step 2

2) Pour Moin Moin batter in oven safe containers like ramekin and oven dishes. Add in filling of choice (eggs, Prawns, etc). Put water in a tray or bowl

3)In this case I put water in the tray before arranging the moinmoin batter filled ramekins in it. I also put a tray of water in the oven. This is so moinmoin comes out moist and not dry. Cover with foil and bake in the oven at 160 degrees for 45mimutes or till done
