I will be sharing great cooking tips and showing you how to cook great food. This classes will be full of knowledge sharing and advice. I will not be holding back. Vegetable Beef Stew

Hello Kfam, As requested by you on my instagram page, here is the recipe for Vegetable Beef Stew. This recipe like all my recipes is easy to make, with easy to find ingredients, fuss free, healthy and delicious. So here we go guys, let’s cook:

Vegetable Beef stew

INGREDIENTS

750g Beef 

1 red pepper (diced)

1 yellow pepper (diced)

1 green bell pepper (diced)

3 medium Carrot (sliced)

1 Brown Onion (diced)

2 Cloves Garlic (chopped)

1 Scotch bonnet (chopped)

1-2 teaspoon K’s Cuisine Cameroon pepper

1 tablespoon K’s Cuisine Multipurpose Seasoning

1 teaspoon thyme

3 Maggi Cubes (stock cubes)

Few leaves fresh Coriander or 1 teaspoon ground Coriander

Ginger

1 Cooking Spoon Sunflower Oil

2-3 cups Beef Stock or Cooking Wine

2 tablespoon Cornflour

Cabbage and any other vegetables of choice (Optional)

 

DIRECTIONS

1) Cut the beef into small cubed bite size pieces. Rinse, drain and season with 2 stock Cubes, salt, Multipurpose Seasoning, thyme, garlic and ginger.  Leave in the fridge to Marinate for atleast 30 minutes

You can do this in a bowl, ziplock bag or freezer bag. Make sure the beef is well seasoned

2) While leaving the beef to marinate, prepare the peppers, Onion, Carrots and other vegetables ready

3) Add Sunflower Oil in a pan, add the beef and brown the sides. This takes about 3-4minutes

4) Add in onion, garlic, scotch bonnet, cameroon pepper, half of the diced peppers, Carrot.

The other half will be added towards the end for some crunch. If you don’t like crunchy, add all in at this stage

5) Add the beef broth or Wine. Cover and leave to cook on low heat for 15 – 20minutes

6) Add in the other half of the peppers, coriander, taste for seasoning and adjust accordingly and leave to cook for another 5 minutes.

7) Mix Cornflour with water,  add the mixture into the stew to thicken and get creamy, healthy delicious vegetable beef stew.

8) Take off heat and enjoy with rice, pasta, yam, plantain, on it’s own or with any meal of choice

Grilled Fish

Hello Kfam, here is the recipe for Zahmilah grilled fish. For this recipe, w used the Zahmilah sauce and K’s Cuisine Multipurpose Seasoning. If you are wondering what Zahmilah sauce is and where to get Zahmilah sauce from, it’s a sauce you can make yourself. The recipe is in the Zahmilah ebook which can be downloaded HERE . If you don’t want to make Zamilah sauce check the blog for another of my grilled fish Recipe HERE. So guys, let’s cook:

Zahmilah grilled fish

INGREDIENTS

Whole Fish (Used Croaker fish but you can use any fish of choice )

Zahmilah sauce

K’s Cuisine Multipurpose Seasoning

Stock Cubes

Salt

DIRECTIONS

1) Descale, gut, clean the Fish, make slashes on it and marinate in and out with Zahmilah Sauce and K’s Cuisine Multipurpose Seasoning

2) Cover with foil and grill in the oven at 150C for 1 hour or till fish done

3) Bring out, take off the foil and return into the oven for another 5-10 minutes to brown the top.

4) Bring out from the grill, top or glaze with hot pepper sauce and that’s Zahmilah grilled fish ready.

Enjoy with any side of choice. Below we served it with fried yam, plantain and hot pepper sauce.

Ogi Smoothie

Hello everyone. It’s another smoothie recipe today but this time with a twist. Adding our own Nigerian Ogi (pap) to smoothie. Yes it’s Ogi smoothie. If you are the type that doesn’t like Ogi this is one way you can try it. The combination of Ogi and fruits works well together  to give a nutritious, delicious and filling smoothie. So here we go:

INGREDIENTS

Ogi (Pap)

Orange

Cucumber

Strawberries

Honey

You can use any fruit of your choice in whatever quantity you prefer

DIRECTIONS

 

1) Make the pap and leave to cool

Oven Baked Moin Moin

Hello guys, today’s Recipe is for oven baked moin moin. This recipe is for when you do not want to steam moin moin on stove top. This recipe is very straightforward. First, click HERE for moin moin batter recipe. Once you’ve done that then Let’s cook:

INGREDIENTS

Moinmoin batter (Recipe here)

Fillings (eggs, Prawns, fish, corned beef)

DIRECTIONS

1) To get the moinmoin leaf flavour use the leaves to line your dishes like I did in the picture below. If not go to step 2

2) Pour Moin Moin batter in oven safe containers like ramekin and oven dishes. Add in filling of choice (eggs, Prawns, etc). Put water in a tray or bowl

3)In this case I put water in the tray before arranging the moinmoin batter filled ramekins in it. I also put a tray of water in the oven. This is so moinmoin comes out moist and not dry. Cover with foil and bake in the oven at 160 degrees for 45mimutes or till done

Serve with paper, eko, bread, garri or any side of choice.

Grilled Catfish

I’m back!

Hello all, it’s been a minute I posted on here. How have you all been? I have actually been active on my social media pages and those of you that follow my pages wouldn’t have missed much.

Anyway today’s post is my recipe for grilled Catfish which I shared on my instagram page sometime ago.

My grilled Catfish recipe is simple easy steps as with most of my recipes yet superb outcome. You can apply the recipe to other types of Fish. Let’s Cook:

Grilled Catfish

INGREDIENTS

3 Whole Catfish

3 tbspn K’s Cuisine Multipurpose Seasoning

3 tbspn K’s Cuisine Suya Spice

2 tbspn sunflower or vegetable oil

1 stock cube

Salt

Moin Moin leaves or Foil

DIRECTIONS

1) Clean and gut the Catfish. Leave to drain then make punctures in the fish (or slash) with knife.

 

2) Line oven dish or tray with moin moin leaves and arrange the fish on it.

3) Season Fish generously with K’s Cuisine Multipurpose Seasoning. Cover with leaves or foil and leave in the fridge to Marinate for 60 minutes.

3) Bring Fish out of the fridge , sprinkle with K’s Cuisine Suya spice and Sunflower Oil then grill in the oven at 150C for 60 minutes or till done.

Step 5 is Optional

5) Bring Fish out, top with Hot Pepper Sauce. Return back in the oven uncovered and grill for another 5 minutes. Bring out and top with more hot sauce.

Chicken Suya Stir Fry

Hello fam, hope you all have been good?

First of all i would like to say a big thank you to all who have supported me by buying my spices. I appreciate it and i am happy and thankful for all the great feedbacks. Thank you guys.

Recently i have been cooking a lot of quick meals as i have so many things to do and so little time so i have been making quick, healthy meals that do not compromise on taste and flavour. One of these meal is Chicken Suya stir fry which i am sharing the recipe with you today.

Chicken suya stir fry is quick, healthy, delicious and yummy. I mean you can’t even go wrong with any food that involves suya right? This dish features two of my spices. So back to Chicken Suya stir fry, Let’s cook:

INGREDIENTS

500g Chicken (cut into bite size)

3 tablespoon Sunflower oil

1 medium Red, green and yellow bell peppers (Sliced)

Cabbage (sliced)

K’s Cuisine Suya spice

K’s Cuisine Multipurpose seasoning

1 Brown Onion (Sliced)

1 clove Garlic (chopped)

2 Stock cubes

Salt

DIRECTIONS

1) Season the Chicken with salt, 1 stock cube and K’s Cuisine Suya spice. Leave to marinade for 10- 60 minutes.

 

If prepared ahead leave for 2hours to marinate

2) In a wok, add 2 tablespoons of Sunflower oil,  add in the chicken. Stir around for 5-10 minutes till chicken is done

3) When chicken is cooked, add in onions and stir for 2 minutes before adding the peppers

4) Let this cook for 2 minutes then add in cabbage, K’s Cuisine Multipurpose Seasoning and 1 stock cube. Toss  and stir for 5 minutes.

7)Taste for seasoning and adjust accordingly. Stir for another 3 -5 minutes and take off heat

8) Chicken Suya stir fry is ready. Serve with rice, noodles, pasta, potatoes or any food of choice. You can eat on it’s own.

Chicken Suya

Hello all, Today’s recipe is for Chicken Suya.

I made some last week and took pictures for the blog but before i could upload the recipe, i made another batch of chicken suya just days ago. I am liking the new pictures better than the previous ones so i am using those for this post😀

INGREDIENTS

Chicken parts (I used drumstick)

K’s Cuisine suya spice

Vegetable Oil

Salt

DIRECTIONS

1) Put Chicken parts in a bowl

2) Add vegetable Oil, suya spice and salt.

3) Mix well and cover with cling film. Leave in the fridge to marinate for 1 hour.

4) Arrange chicken in a baking tray or dish, cover with foil and grill in oven for 40 minutes

5) Remove the foil cover, brush chicken with a bit of oil and more suya spice. Leave uncovered and grill till done. That’s Chicken suya done.

Ofe Nsala (White Soup)

Hello all and happy Monday.

The last few weeks have been a busy one as the kids have been on holiday and also i have been making some major organisation with the home and also the business. Hope you all enjoyed the Easter break like i did. Today’s recipe is White Soup.

White soup is called Ofe Nsala by the igbos and Afia Efere by the Calabar people. This is one very popular soup in Eastern Nigeria. Why is it called white soup you might want to know. It’s because it does not make use of palmoil and hence the pale look of the soup compared to soups made with palm oil.
This soup is easy to prepare and delicious. It is traditionally made with catfish. For this recipe, I made use of seafood only including the traditional catfish but you can add meat and chicken if you like.

This soup is one of the easiest and fastest to prepare. Just like Ila asepo and what’s more? it’s delicious!  Let’s get cooking:

INGREDIENTS

2 Catfish

Few pieces Smoked fish

Few pieces Stock fish ( I used fillet)

3 tablespoons Ground crayfish

Few pieces Fresh Prawns

1 wrap Ogiri

2 stock cubes

1 tablespoon blended Uziza seeds or peppersoup spice

Yam cubes or yam powder

Uziza or Basil leaves

Salt

DIRECTIONS

1) Prepare the thickener by boiling the yam cubes and pounding. If using fresh yam check out how to pound yam in food processor HERE.

If using yam powder, add hot water to yam flour and turn till it forms smooth paste then set aside

2) In a pot, add 3 cups of water then add the stock fish and smoked fish fillet.

IMG_50723) Add ground pepper, crayfish, stock cubes, uziza seeds and ogiri and leave to boil for 10 minutes

IMG_50804) Add fresh prawns, taste for salt and adjust according then add the yam paste in small lumps , cover and leave to cook for another 5-10minutes or till yam dissolves

5) The yam paste will be dissolved by now, add in the catfish, crayfish, scotch bonnet and uziza leaves.

Nutriblast Smoothie

Hello fam, Today i’m sharing with you one of my family favourite smoothie recipe.  It’s simple yet absolutely delicious. I Call it Nutriblast Smoothie because this smoothie provides a full blast of nutrients. It has a little bit of our favourite fruits without any overpowering the taste. For example my hubby loves Mango and i on the other hand not a big fan, i like oranges and berries. Combining all these brings out a classic taste which we are all cool with. So kfam, here is the recipe, Let’s go:

Smoothie

INGREDIENTS

2 Oranges

1 small Mango (Peeled and cut)

1/6 of small size Pineapple

Handful Strawberry

1 Banana

1 small tub Yoghurt (about 150ml)

1 tablespoon Honey (Optional)

DIRECTIONS

1) Pour yoghurt first in the blender.

K’s Cuisine Tip: Putting liquid base ease the blending process hence why yoghurt and orange goes in first.

2) Peel the oranges and add into the yoghurt.

I peeled the oranges and mot squeeze because the oranges i get here in the UK are seedless. If in Nigeria or elsewhere that oranges are not seedless please squeeze out the juice and discard the seeds

3) Add in all other fruits

4) Add in the honey (this step is optional)

4) Blend until very smooth and that’s nutriblast smoothie ready.

Extra Tips

I pack fruits in portion in ziplock bag and freeze. When needed i bring out and blend. It gives cold smoothie and no need for use ice

I use milk or yoghurt base as they provide additional source of Calcium

If like me you don’t like smoothie too thick, add some water to blend.
