Ingredients
300gBeef
3tbspCurry powder
1tbspTurmeric
1tbspThyme
2ThumbsizeGinger grated
4ClovesGarlic minced
1HandfulCoriander chopped
¼TeaspoonCumin
½TeaspoonCameroon pepper
2Stock cubes
2Plum Tomatoes Chopped
1Scotch bonnet Chopped
3tbspSunflower or Vegetable oil
1LargeOnion Chopped
Coconut milk or water
150gCarrot - sliced Optional

1.5 tbspCornflour or 1 Potato
Instructions
Cut the beef into bite size then add the garlic, ginger, cumin, cameroon pepper, curry powder, coriander and thyme. Cover with clingfilm and put in the fridge to marinade for atleast 2 hours. I normally leave to marinade overnight.
Add oil in a pot then add in sliced onions and Turmeric. Add in the marinated beef and brown the sides.
Add in chopped tomatoes and scotchbonnet, coconut milk or water and cover. Slow cook for about 45 minutes or till beef tender. Add in carrot and let cook for another 5 minutes.
You can either thicken with potatoes or cornflour/water mixture. If using potato, peel it cut into 4 and add to the curry then cook for 5-10 minutes till it's thickened to your desired consistency.If using cornflour, add water to the cornflour and mix till smooth then pour in the beef Curry. Simmer for 3 minutes then take off heat.
This is where you enjoy and savor the taste of this amazing, flavor packed beef Curry. You can eat it on it's own, serve with rice, bread, pasta or any other dish of choice.
