Gizdodo Recipe - Dodo Gizzard

Ingredients

  • 500 g Gizzard Chicken or Turkey
  • 4 Plantains Ripe
  • 1 large Bell pepper or 2 medium
  • 1 medium Onion
  • 2 Scotch bonnet or to suit taste
  • 4 Tomatoes
  • ¼ cup Chopped Onions
  • 2 Stock cube Bouillion)
  • 3 teaspoons Curry powder
  • 2 teaspoon Dried Thyme halved
  • Salt to taste
  • Oil Vegetable or Sunflower oil

Instructions

  • Wash gizzard, put in a pot and add the chopped onions, 1 stock cube, 2 teaspoons of curry powder, 1 teaspoon of dried thyme and a cup of water. Leave to cook on medium heat.
    When the gizzard is cooked, transfer to a bowl, leave to cool then cut into bite-size cubes. Set aside.

  • Cut the plantains into cubes (about the size you have diced your gizzard), deep fry, and place on a paper towel to drain excess oil. Set it aside.
    Fry the gizzard (you can use the same oil used in frying the plantain)

  • Blend the scotch bonnet, bell pepper, tomato and onion.
    Heat 2 cooking spoons of vegetable or sunflower oil then add the blended pepper, 1 stock cube, 1 teaspoon of curry powder, 1 teaspoon of dried thyme and salt. Leave to fry for 10 minutes.

  • When the sauce is fried, add the fried gizzard, stir and leave to cook for 2 minutes before adding the fried plantain. Stir the plantain and gizzard in the stew and leave for another 2-3 minutes before taking it off heat.

Notes

How To Store
To store, leave it to cool completely then put in airtight bowl or ziploc bag then put in the fridge or freezer.
Gizdodo will last in the fridge for up to 5 days and in the freezer for up to 4 months.
When needed, bring out, thaw and heat in the oven or microwave. You can also heat on the stovetop but add few tablespoons of water in the pot to heat it.
