- 350 g Pasta
- 2 Canned Salmon
- 400 g Chopped tomatoes
- 1 medium Onion chopped
- 1 tablespoon Tomato paste
- ½ teaspoon Parsley
- 1 teaspoon Italian seasoning
- 1 teaspoon Paprika
- ¼ teaspoon Garlic granules
- ¼ teaspoon Black pepper
- 1 Stock cube crushed
- Salt to taste
- 1.5 tablespoon Olive oil
- ¼ cup Parmesan Optional
Place a pan on medium heat, add oil then chopped onions. Saute the onions till fragrant (about 1-2 minutes).
Add chopped tomatoes, Italian seasoning, parsley, black pepper, paprika, garlic granules, stock cube and salt. Stir and cook the tomatoes for 10 minutes. Intermittently stir it so it doesn't stick to the pan or burn.
Drain the canned salmon and add it to the tomato sauce. Use the cooking spoon to gently break the salmon into smaller chunks but be careful not to crumble it (unless you like it all crumbled in the sauce). Let it simmer for 2-3 minutes.
While the sauce is cooking, add water to a separate pot, bring it to a boil, and add salt and pasta. Stir and boil the pasta till it is aldente.
Add the pasta water and parmesan to the salmon sauce, stir, and add the pasta.Gently stir till the salmon sauce is well mixed with the pasta while being careful not to crumble the salmon. Garnish with fresh basil or parsley. Sprinkle parmesan over the pasta (Optional).Take off the heat and serve.
- If you have spinach or peas you can add them towards the end of cooking this dish. It adds more nutrients to the meal.
- You can also use leftover baked or air-fried salmon.
- This is salmon pasta with tomato and cream recipe however if you prefer to add cream, add a cup of double cream before adding pasta water into the sauce. You should then reduce the pasta water to half a cup.
- You can make this a baked pasta dish by adding it to a baking dish, topping it with cheese, then baking it in the oven for 10 minutes or till the cheese is melted.
