Lamb Steak Marinade

My lamb steak marinade recipe is easy, quick, and made with a few simple ingredients. This lamb marinade tenderizes and flavors with minimal effort, and it can be used on any cut, including lamb chops, leg of lamb, shoulder and other meats.

Ingredients

  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 tablespoon Worcestershire sauce
  • 3 cloves Garlic minced
  • 1 teaspoon Mixed herbs
  • ½ teaspoon Paprika optional
  • ¼ teaspoon Onion powder
  • ¼ teaspoon Black pepper or to taste
  • Salt to taste

How To Make Marinade For Lamb Steaks

  • Whisk olive oil, lemon juice, and Worcestershire sauce in a bowl until slightly blended. Add paprika, garlic, herbs, black pepper, and salt.
  • Mix well until the ingredients are combined and the marinade turns darkish and aromatic.

How To Marinate Lamb Steak

  • Pour the marinade over the lamb steaks in a shallow dish or resealable bag (Ziploc), making sure they’re fully coated. Cover and refrigerate for at least 30 minutes. If you want to marinate overnight, don't add the lemon to the marinade; only add lemon a few minutes before cooking the lamb.
    Before cooking, bring the meat to room temperature and discard any excess marinade.
  • Cook marinated lamb steak in the oven, grill, pan, or air fry lamb steaks.

Notes

  • Use fresh garlic instead of powder.
  • Thaw meat completely before marinating.
  • Don’t over-salt. Since Worcestershire sauce already adds some saltiness, taste your mixture before adding more. You can always season the steak lightly again before cooking.
  • If marinated in a ziploc, turn the bag or flip the lamb once or twice while it marinates, so the meat absorbs the flavors evenly on all sides.
