Onion Rice Recipe

This onion rice recipe is my go to when I want a quick flavoured rice dish. It is easy to make, quick, and delicious. Serve it with steak, chicken, fish, or any other main dish of your choice.

Ingredients

  • 1.5 cups Uncooked rice easy cook long grain rice
  • 1 small Onion
  • 1.5 tablespoon Olive oil
  • Salt to taste
  • 3 cups Chicken Broth or Water

Instructions

  • Peel and chop the onions.
  • Wash rice till the water runs clear. This takes about 3-4 rinses. Drain and set aside.
  • Place a pan or pot on medium heat, add oil then add the chopped onions. Fry the onions till translucent, release its aroma, and begin to brown.
  • Add the washed rice to the pot,  add chicken stock, and salt. Stir then cover the pot with its lid.
  • Cook on medium heat till it starts to boil then reduce to low heat and continue to cook till the water dries and the rice is tender. This takes 20-25 minutes
  • Take the pot off the heat and let it rest for 5 minutes. Take the lid off and stir to combine.
    Serve and enjoy.

Notes

  • When the rice is cooked, add a squeeze of lemon juice to enhance the flavor.
  • You can add herbs like parsley and dried thyme. If adding, do so at the time you add chicken broth.
  • Love garlic? feel free to add it after sauteeing the onions.
