He couldn't have said it any better and I totally love it. Creativity when it comes to food is as simple as thinking it,experimenting and implementing it. Our forefathers laid the foundation and we inherited amazing recipes, now we have taken over and gone are the days Nigerian food was in the background. Lets keep up the creativity and keep churning out amazing recipes generations unborn will be proud of 🙂

Dodo Ikire is a snack made with overripe (almost rotten) plantain and pepper. It is made popular by the Ikire people. Ikire is a town in Osun state of Nigeria.

When next you have over ripe plantain or almost rotten plantain, don't let your heart sink and don't bin them just think dodo Ikire. I say, when life throws you rotten plantain, joyfully make dodo Ikire and you'll be glad you did 🙂

Preparation time: 3 minutes

Cooking time : 7 minutes

Total time: 10 minutes

INGREDIENTS

1 over ripe plantain (with black skin)

1 small bell pepper (crushed)

Palm oil

Vegetable oil

DIRECTIONS

1) Peel the skin off the plantain and put in a bowl

2) Mash plantain with spoon or hand and mix in the crushed bell pepper

3) Put mixture of palm oil and vegetable oil in a frying pan and put on heat.

4) When heated, scoop in the plantain with cooking spoon or hand in small balls and let it fry.

5) Flip over and let the other side fry till dark brown. Remove and put in a plate

Note: Don't put on paper towel as it will harden and stick to it.

6) Dodo Ikire is ready. Serve warm.

Tip: Wrap in plastic bag or cling film. The moisture that forms when covered warm with cling film will leave the dodo Ikire moist and soft. If left open it hardens up.

    How can i preserve this DODO IKIRE and for how long can it be preserved.

      Store in the fridge or freezer. It will last in fridge for 3-4 days and freezer for 3 months.
