My roast chicken seasoning recipe is easy and quick to put together. This is a dry rub seasoning for whole chicken that can also be used on other parts, such as breast, thighs, wings, and drumsticks. It is made with a few herbs and spices that tenderise and infuse flavor, making any poultry deliciously juicy on the inside and crispy on the outside.

Roast Chicken Seasoning Recipe
This roast chicken seasoning rub can be put together in just 5 minutes. You measure out the ingredients, mix, and it's ready to use!
It is aromatic and flavorful, and a little goes a long way when seasoning whole chicken. It is what you need to make juicy roasted chicken that everyone will love.
I like that my roast chicken dry rub is made with a few pantry ingredients that are inexpensive and readily available. It is also convenient and does the job perfectly.
This homemade whole chicken seasoning can be used on other chicken parts. It can also be used on other poultry like hens and turkeys.
Another reason why I love this seasoning for roast chicken is its long shelf life. It can be stored for 6-12 months, depending on the best-before date of the ingredients used. What you have to do after mixing is to store it in a spice container and keep it in a cool, dry place.
This is the best seasoning for roasting chicken if I do say so myself, and it has never failed in producing tender, flavorful chicken with crispy skin.
This roasted chicken seasoning recipe makes 4 tablespoons, and it is enough to season up to 2.5 kg of whole chicken.

Ingredients
Here are the herbs and spices to make seasoning for a whole chicken:
Paprika- I like to use smoked paprika, but regular paprika works just fine.
Parsley
Garlic granules or powder
Onion powder or granules
Dried Thyme
Rosemary- This herb is great for roast chicken.
Tarragon- This is an aromatic and flavorful herb that goes well with any poultry.
Black pepper - Adjust to taste.
Cumin- A little bit of this goes a long way.
Brown sugar- I like the impact of this in the seasoning and how it contributes to making the chicken skin golden brown.

How To Make Roast Chicken Seasoning
Measure out the paprika, garlic granules, onion powder, black pepper, parsley, rosemary, thyme, cumin, brown sugar, and tarragon into a dry bowl.
Mix till the ingredients are well combined.

For a smoother texture, pour the mix into a spice grinder and blend till smooth.

Transfer the chicken seasoning into a clean and dry spice container.
Label and store it in a cool, dry place away from direct sunlight.
How To Season Whole Chicken To Roast
There are two ways I like to do this:
Method 1:
Clean the whole chicken and pat it dry with paper towels.
Mix the seasoning with 2 tablespoons of butter and 1 tablespoon olive oil.
Rub the seasoned butter under the skin of the chicken, inside the chicken, and all over the chicken.
Roast the chicken till tender and juicy.
Method 2: Dry Rub
Clean and pat the chicken dry with paper towels.
Brush the chicken with olive oil, then sprinkle the seasoning inside and all over the chicken, ensuring all parts are covered.
Gently pat in the seasoning.
Cook chicken till tender and juicy.
How To Roast
Layer the baking dish with vegetables like carrots, onions, and potatoes.
Add ½ cup of water or chicken stock to the baking dish.
Place the seasoned chicken on the vegetables.
Bake chicken in the oven for 60 minutes at 200C/400F. The internal temperature should be at least 75C.
Bring out the chicken, rest for 10 minutes before cutting.

Tips
- This seasoning is enough for up to 2.5kg (5lb) of chicken.
- Check the expiration dates of the ingredients and use long-dated ones.
- Use clean, dry utensils throughout to avoid moisture from getting into the seasoning. Moisture can make it clump or get mouldy.
- Increase or decrease the amount of pepper to suit you.
