My whole chicken marinade recipe is so good that once you try it, it will be your go-to marinade for chicken and poultry of all types. It tenderizes and flavors chicken making it juicy and delicious when roasted, air fried, or grilled. Not only do I use this on whole chicken but I also use it on other parts like chicken breasts, legs, and wings.
Whole Chicken Marinade Recipe
If there is one thing I like about this whole chicken marinade recipe, it's that it mostly uses dried herbs and spices commonly found in most home pantries.
It is full of flavor and you can be sure you will not have a bland chicken if you use this recipe.
This marinade for whole chicken tenderizes the chicken and infuses flavor so you get juicy, flavorful, and tender chicken whether it is baked, grilled, or air-fried.
Making this marinade is inexpensive as it uses only a few ingredients that are budget-friendly and easy to get.
It is also easy and quick to make this marinade for roast chicken and can be put together in just 5 minutes.
This recipe makes enough for 2kg chicken. It can be doubled or tripled if needed.
Ingredients
Here are what you will need:
Parsley
Rosemary
Thyme
Garlic powder
Onion granules
Paprika
Black pepper
Salt
Olive oil
Lemon juice
Brown sugar - This can be omitted or substituted for soy sauce.

How To Make Whole Chicken Marinade
Add paprika, rosemary, parsley, thyme, black pepper, garlic, onion, olive oil, lemon juice, brown sugar, and salt to a bowl.
Mix all the ingredients in the bowl till they are well combined.
The marinade is ready to be used.
How To Marinate Whole Chicken
You have made the marinade and you want to marinate whole chicken, here's how to go about it:
Step 1- Remove giblets from inside the chicken and use kitchen towels to pat the whole chicken dry.
Step 2- Place it on a tray or flat surface, then apply the marinade all over and on the inside of the chicken.
a Step 3- Peel and cut one brown onion into 4, and stuff these into the chicken cavity.
Step 4- Cover the whole chicken with foil then place it in the fridge where it should marinate for 120 minutes up to 24 hours.
How To Store
This marinade can be stored in the fridge for up to 48 hours or in the freezer for up to 1 month. To use, bring it out and let it get to room temperature, mix till combined, and use.
How To Cook Marinated Chicken
Oven- Bake in the oven at 200C/400F for 90 minutes or till cooked to an internal temperature of at least 165F/75C.
Air fryer- Air fry at 180C/380F for 25 minutes, flip, and air fry for another 20-25 minutes till it's cooked to an internal temperature of at least 165F/75C.
Tips
- Substitute the dried herbs and spices for fresh if available.
- Marinate the chicken for at least 2 hours. It can be marinated for 4 hours or overnight in the fridge.
- You can add 1 or 2 more herbs to the marinade.
- Double this marinade recipe if using a bigger chicken.
