Oven Baked Chicken And Potatoes Recipe

This oven baked chicken and potatoes recipe is easy, quick, and simple. With just a few ingredients and minimal prep, you get a delicious one pan chicken dinner on the table in under an hour.

Cooking chicken legs and potatoes in the oven together saves time as they cook at the same time. It is perfect for weeknight dinners, meal preps, or special occasions.

These baked chicken drumsticks and potatoes are flavorful, and filling. I like making it for my family as not only is it easy to make, and bold in flavors, but it is also budget-friendly.

Serve baked potatoes and chicken with roasted vegetables and gravy or serve it with the pan juice from the baking tray.

Ingredients

Here are the ingredients you'll need to make one pan baked chicken and potatoes:

Chicken drumsticks

Potatoes - I like using Maris Piper potatoes for this recipe, but you can also use King Edwards potatoes, red potatoes, baking potatoes, or any other good one.

Paprika

Rosemary

Parsley

Cumin

Thyme

Garlic

Onion granules

Black pepper

Salt

How To Bake Chicken and Potatoes In The Oven

Step 1 - Add paprika, rosemary, parsley, cumin, garlic, onion granules, black pepper, and salt to a small bowl. Mix till combined.

Step 2- Clean and pat the chicken drumsticks dry with kitchen towels.
Add half of the seasoning and half the olive oil to the chicken. Mix till the drumsticks are evenly coated.

N Step 3- Peel the potatoes and cut them into 1-2 inches sizes, rinse, drain, and pat them dry with kitchen towels.

Step 4- Add the remaining half of the seasoning and olive oil to the potatoes and mix till they are evenly coated in the seasoning.

Step 5- Arrange the chicken drumsticks and potatoes on a baking tray and bake them in the oven at 200C/400F for 40 minutes.

Ensure the chicken is cooked to a core temperature of at least 165F/75C.

Step 6- Bring out the tray from the oven, let the chicken rest for 5 minutes then serve.

I like serving it with gravy and sauteed vegetables. Here are some other recommendations of what to serve it with:

How To Store

Let it cool completely then transfer to an airtight container and store it in the fridge for up to 4 days. It can be easily reheated in the oven, air fryer, or microwave.

Tips For Baked Chicken Drumsticks and Potatoes

  • You can bake carrots with the chicken and potatoes at the same time.
  • Swap the seasoning for any other good seasoning for potatoes and chicken. Examples: cajun seasoning, Jerk seasoning, chicken seasoning.
  • You can use chicken drumsticks and bone in chicken thighs.
  • There is no need to cover the tray with foil while baking.
  • Let the chicken rest for about 5 minutes, allowing the internal juice to redistribute before serving.
  • You can use the pan juice to make gravy to serve with the dish.

  • 1 kg Chicken drumsticks
  • 1 kg Potatoes
  • 1 tablespoon Paprika
  • ½ teaspoon Parsley
  • ½ teaspoon Rosemary
  • ¼ teaspoon Dried thyme
  • ¼ teaspoon Cumin
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion granules
  • ½ teaspoon Black pepper or to taste
  • Salt to taste
  • 2 tablespoons Olive oil

Instructions
