Oven Baked Diced Potatoes

This oven baked diced potatoes recipe is easy and quick. The cubed potatoes are fluffy on the inside and crispy on the outer. It is flavorful and makes the perfect side dish for any occasion.

Baked Diced Potatoes Recipe

Diced potatoes are also called cubed potatoes, chopped potatoes, and potato cubes. I have used them interchangeably in this post.

This oven-baked cubed potatoes recipe is one of my favorite methods of cooking a potato side dish that looks good and smells and tastes amazing.

It is a delicious side dish and we like to serve it with fried eggs, chicken, or Steak.

With this recipe, we like to peel the potatoes and dice them into bite-size, season and cook till the outer are crispy and the inside tender. When I say we, I mean my girls doing the peeling, while I take over and dice. My children like it when it's on the menu.

Another thing I like about baked diced potatoes is that it doesn't require much preparation. Once you cube the potatoes, the other steps are quick and hands free.

I like to use Maris Piper Potatoes to make crispy cubed potatoes and when I am not using this, I use King Edwards potatoes, baking potatoes, or even red potatoes. I have found floury potatoes make for fluffy inside and crispy outer.

Ingredients

Potatoes- Baking potatoes, Maris piper, King Edwards, or any of your choice.

Paprika

Rosemary

Parsley

Onion granules

Garlic powder

Salt

Olive oil

Self raising flour - Optional

How To Bake Diced Potatoes

Preheat the oven to 200C/400F.

Peel the potatoes, and dice them into ½-1 inch bite-sized cubes.

Add the potatoes into a bowl, rinse, drain, and pat them dry with kitchen towels.

Add parsley, rosemary, paprika, garlic granules, onion granules, salt, black pepper, self raising flour, and oil.

Mix till the potatoes are well combined with the seasoning then transfer the potatoes to a baking tray.

Bake cubed potatoes in the oven till it's tender inside and crispy outside (this takes 20-25 minutes).

Take it out of the oven, and serve.

How Long To Bake Diced Potatoes

The cooking time for diced potatoes will vary depending on the temperature of the oven and the size of the cubed potatoes. If cut into about half-inch to 1-inch size, then how long to cook diced potatoes at 200C/400F is 25 minutes.

If cooked at a lower temperature, cooking time will take longer. Having tested different temperatures, I recommend cooking cubed potatoes at 200C/400F as I found it the best temperature to get crispy outer and well cooked inside without the potatoes burning or drying out before they are cooked.

What To Serve With Cubed Potatoes

These are some recommendations for what to serve with cubed potatoes:

Air fryer chicken drumsticks

Peri Peri chicken

Coleslaw

Air fryer broccoli

Air fryer diced chicken

Fish fingers

Storage

To store, let the cooked potatoes cool completely then transfer into an airtight container. Store it in the fridge for up to 5 days or in the freezer for up to 3 months.

To reheat, transfer the potatoes to a baking tray or dish, and bake in the oven at 180C/380F for 8 minutes or until they are warmed through and crisp on the outer.

Tips

  • If time is not of the essence, after cutting the potatoes, soak them in cold water for 30 minutes then drain, and pat dry before seasoning.
  • Peeling the potatoes is not necessary however, if leaving the skin on, ensure to wash the potatoes thoroughly to get rid of any dirt.
  • Cut the potatoes into similar sizes for even cooking.
  • Don't overcrowd the baking tray with potatoes. It's best to leave a bit of space between them.
  • Toss the potatoes halfway through cooking so they are crisp on all sides.
