Oven Baked Chicken Bites Recipe
This oven baked chicken bites recipe is quick and ready in under 30 minutes. It's great for a midweek dinner when you want a tasty chicken dish.
It is easy to make these cubed chicken bites. Dice chicken, season, and bake! That's it! No long preparation or daunting cooking steps are involved. After baking the chicken, I tossed them in buffalo sauce to make baked buffalo chicken bites just the way my children love it, but that's optional as you can decide not to add sauce to yours. If you do wish to, I have included the recipe for the sauce.
This dish is bursting with flavors. It is meal prep-friendly, nutritious, and delicious. Every bite is tender and flavorful.
Only minimal prep is required to make these baked chicken breast bites. They store and reheat well, so they can be made ahead.
Ingredients
Here are the simple ingredients you will need:
Boneless skinless Chicken Breast - Can be substituted for ready diced chicken or boneless chicken thighs.
Paprika- I like to use paprika for its flavor and color.
Onion powder
Garlic powder
Italian seasoning
Black pepper
Oil- This can be sunflower oil or olive oil. I like to use extra virgin olive oil.
Salt

How To Make Baked Chicken Bites
Cut the chicken - Clean and pat the chicken breasts dry and cut into 1-11/2 inch cubes.
Season- Add the cubed chicken to a bowl, then add olive oil, Italian seasoning, paprika, onion powder, garlic powder, black pepper, and salt. Mix them all together.
Tip: If you have the time, cover the chicken bowl with a cling film and let the chicken marinate for 30 minutes.
Bake- Transfer the seasoned cubed chicken into a baking dish and bake them in the oven at 400F/200C for 15 minutes.
Remove the baking tray from the oven, let the chicken rest for 5 minutes, then serve.
Tip: If you want to add sauce, like buffalo sauce or bbq sauce, toss the chicken in the sauce as soon as it comes out of the oven and let it rest for 5 minutes before serving.
Variation
Baked buffalo chicken bites- As stated above, once the chicken is cooked and out of the oven, toss them in Buffalo sauce. I have included the buffalo sauce recipe at the bottom of this post.
Baked BBQ chicken bites- Toss the chicken in a homemade BBQ sauce or a good store-bought BBQ sauce.
How Long To Cook Diced Chicken In the Oven
Cook diced chicken bites in the oven at 200C/400F for 20 minutes. This is based on bite sizes of 1-2 inches. If the chicken pieces are bigger than this, they might take longer to cook. Check on the chicken after 15 minutes, and if need be, adjust the time accordingly. You will know the chicken bites are cooked when the internal temperature reads 74C/165F. The outer of the chicken will be browned, and the inside will be juicy and tender.
If you're wondering if you can cook diced chicken in the oven at 180C/360F, the answer is Yes! It will take an additional 5 minutes than baking it at 200C/400F. So, how long to cook diced chicken at 180C is 25 minutes.
What To Serve With
Use chicken bites in Salads or wraps or serve with the below suggested sides:
Mashed potatoes
Roasted vegetables, pan fried carrots
Salad
They can also be served as appetizers with Dips like bang bang sauce, peri peri sauce, honey mustard sauce, and ranch sauce.
Storage Information
Cool the chicken quickly, and when completely cooled, transfer to a sealable container and store the chicken bites in the fridge for up to 4 days or in the freezer for up to 3 months.
Reheat in the oven - Transfer the chicken to a baking dish and bake it in the oven at 160C for 6 minutes or until warmed through.

- Dice the chicken into similar sizes for even cooking.
- The seasoning used in this recipe is simple and flavorful, but you can use any flavorful seasoning for the chicken.
- The chicken can be marinated in the fridge for up to 48 hours.
- Don't crowd the baking dish. It's best to have spaces in between the cubed chicken for even heat distribution and cooking.
- Avoid overcooking the chicken, and when it is cooked, remove it from the oven immediately. Leaving it in the oven will cause the retained heat in the oven to keep cooking it.
- Rest the chicken for 5-10 minutes before you serve it.
