The crispy potatoes with fluffy inside, combined with the flavor and texture of the onions and bell peppers make this dish one that your tongue will remember for a long time.

It is a versatile side dish that can be served with almost anything...Steak, lamb, fried eggs, fish, sauces, and more.

This budget friendly and colorful potato dish is not only appealing to the eyes but it also smells and tastes great.

It's a one pan potato recipe that is easy to make, requires minimal preparation, and tastes delicious.

The tools required for this oven potatoes recipe are a potato peeler, sharp knife, chopping board, and baking tray or dish.

This baked potatoes and onions with peppers recipe is made with a few simple ingredients and the flavors from the herbs and spices are amazing.

Ingredients

Here are the ingredients you will need to make it :

Potatoes- Maris piper, russet potatoes, King Edward, Baking potatoes, or any potatoes good for roasting.

Bell pepper- I used red bell pepper. You can use both red bell pepper and yellow pepper if you prefer.

Onion- Brown onion, Yellow onion, or red onion.

Paprika- Smoked parika, hot paprika or regular paprika.

Rosemary- This herb goes well with roasted potatoes.

Parsley- This can be substituted for Mixed herbs or Italian seasoning.

Garlic granules- This can be substituted with garlic powder.

Black pepper- You can use cayenne pepper if that's what you have.

Olive oil

How To Roast Potatoes And Onions With Peppers

Step 1- Peel the potatoes, cut them into 1-inch cubes, wash and pat dry.

Step 2- Peel the onions, rinse and cut into chunks.

N Step 3- Rinse the bell pepper and cut into cubes of similar size to the onions.

Step 4- Add the potatoes, onions, and bell peppers to a baking dish.

Step 5- Add rosemary, paprika, parsley, black pepper, garlic granules, salt, and olive oil to the baking dish. Mix the potatoes, onions, bell peppers, and seasonings till all are well combined.

Step 6- Bake potatoes onions and bell peppers in the oven at 200C/400F for 40- 45 minutes or until it's golden and crispy on the outer and tender inside. Stir at least once or twice during the baking time.

Bring it out of the oven, serve, and enjoy.

What To Serve With

Some main dishes you can serve these potatoes and peppers dish with are:

How To Store

Let the veggies cool completely, then transfer them to a sealable container and store them in the fridge for up to 4 days or in the freezer for up to 3 months.
Roasted potatoes and onions can be reheated in the oven, air fryer, or microwave.

How to reheat in the oven- Transfer them into a baking dish, and bake them in the oven at 180C/380F for 8-10 minutes or until heated through. Bring out and serve.

How to reheat in the air fryer- Transfer the potatoes and peppers to the Air fryer and air fry at 180C/380F for 5 minutes or until heated through inside.

Tips For Making Potatoes, Onions and Peppers

  • If you like to leave the skin on potatoes, wash them thoroughly before dicing them.
  • Don't cut the potatoes too big so they are cooked when the other veggies are.
  • You can use any seasoning of your choice on the potatoes and peppers. Examples of seasonings that go well with potatoes and other veggies are cajun seasoning, herbs de provence, vegetable seasoning, and Italian seasoning.
  • You can leave out onions or bell peppers if you prefer.
  • Want a more colorful dish? Use red, yellow and green bell peppers instead of just red.
  • Stir the potatoes and peppers at least once during the roasting time so they cook and crisp on all sides evenly.
  • Serve and enjoy on its own or with any side of your choice.

  • 1 kg Potatoes
  • 1 large Onion
  • 1 large Bell pepper
  • 1 teaspoon Paprika
